Chicken Vegetable Soup

2 tablespoons olive oil
1 medium onion, finely diced
1½ cups carrots (4–6 medium), chopped
1½ cups celery (3–5 stalks), chopped
3 cloves garlic, minced
2 teaspoons turmeric
1 teaspoon thyme (or 3 fresh sprigs)
1 teaspoon smoked paprika
1 teaspoon basil (or 2–3 fresh leaves, chopped)
1 teaspoon dried parsley (or equivalent fresh parsley)
6 cups chicken bone broth
2 chicken bouillon cubes
2 bay leaves
pepper, to taste
1 pound cooked, shredded chicken breasts
1 lemon, juice
Ingredients
Prepare the Vegetables
1. Finely dice the onion.
2. Chop carrots and celery to your preferred size. For celery, slice lengthwise, then chop. For carrots, slice into thin circles.
3. Mince the garlic.
Sauté the Vegetables
4. Heat olive oil in a large pot over medium heat.
5. Add onions, carrots, and celery. Sauté for about 8 minutes, stirring occasionally, until carrots are soft, onions are translucent, and everything is caramelized.
6. Stir in the minced garlic and cook for 1 minute until fragrant.
Add Seasonings
7. Sprinkle turmeric, thyme, smoked paprika, and basil into the pot. Stir well and sauté for another minute to let the spices bloom.
Build the Soup Base
8. Pour in the bone broth, then add the chicken bouillon cubes and bay leaves. Stir to combine.
9. Bring the soup to a boil, then reduce the heat to a simmer. Let the vegetables cook until they reach your desired tenderness, about 5–7 minutes.
Add the Chicken and Lemon
10. Stir in the cooked, shredded chicken and season with black pepper. Add the fresh squeezed lemon and let the soup simmer until the chicken is heated through.
