Honey Roasted Carrots & Whipped Feta Dip

Sweet, savory, and oh-so-satisfying, this dish is the perfect balance of flavors and textures. The carrots are roasted to golden perfection, coated in a buttery honey glaze with a hint of spice, and topped with crunchy pecans for added depth. Paired with a creamy, tangy whipped feta dip, this recipe is a true crowd-pleaser.

Honey Roasted Carrots

  • 6-8 medium-sized carrots

  • 3 tbsp butter, melted

  • 2 tbsp honey

  • 1/2 tsp cayenne pepper

  • pinch of salt

  • 2 cloves of garlic, or 2 tsp chopped garlic

  • 1/3 cup chopped pecans, optional

Whipped Feta Dip

  • 4-6 oz good-quality feta cheese

  • 1/4 cup Greek Yogurt, can add more if would like a thinner dip

  • Juice of half a lemon

  • 1 clove garlic

  • Pinch of salt

  • Cracked Pepper to taste

For the Carrots

  1. Preheat your oven to 400°F (200°C).

  2. Peel and cut the carrots lengthwise or into chunks, depending on your preference.

  3. Grate the garlic.

  4. In a small bowl, mix melted butter, honey, cayenne pepper, salt, and garlic.

  5. Place the carrots on a lined baking sheet and pour the butter mixture over them. Toss thoroughly to coat.

  6. Bake for 15 minutes.

  7. Remove the tray from the oven, sprinkle pecans over the carrots, and return to bake for another 10–15 minutes, until the carrots are golden brown.

For the Whipped Feta Dip

  1. Pat the feta dry using a paper towel, pressing gently to remove excess moisture.

  2. Combine feta, Greek yogurt, lemon juice, garlic, salt, and pepper in a food processor. Blend until smooth.

  3. Scrape the mixture into a bowl and refrigerate until ready to serve.

Tips from My Kitchen

  • If you have any leftovers, throw them in a salad the next day! I love adding this to my same old salads for something a little special

  • Go the extra mile and put the pecans in! The additional crunch is to die for and adds a nice nuttiness to the dish

  • This dish is elevated but takes less than half an hour to make! It's so easy for company so you can socialize and cook without worrying about one or the other
